Ingredients
- 90g (gluten-free) oats
- 25g whey protein powder
- ½ tsp baking powder
- 2 tbsp coconut sugar
- 1 handfull of walnuts (chopped)
- 1 pinch of salt
- 6 tbsp melted butter
- 1 egg
- 4 chopped dates
Method
- Pre-heat the oven to 180°C
- Line a large baking tray with grease-proof paper.
- Mix the dry ingredients together (oats, whey powder, coconut sugar, walnuts, and salt).
- Whisk the egg and melted butter together.
- Add the egg and butter mixture to the dry ingredients.
- Add the chopped dates to the dry ingredients and stir together until you have a cookie dough.
- Add a spoonfull of the dough to the baking tray for each cookie.
- Bake for 15-20 minutes until golden and solid.
- Leave to cool on the tray for 5 minutes then transfer to a rack to cool.
