Oat date cookies

Method

  1. Pre-heat the oven to 180°C
  2. Line a large baking tray with grease-proof paper.
  3. Mix the dry ingredients together (oats, whey powder, coconut sugar, walnuts, and salt).
  4. Whisk the egg and melted butter together.
  5. Add the egg and butter mixture to the dry ingredients.
  6. Add the chopped dates to the dry ingredients and stir together until you have a cookie dough.
  7. Add a spoonfull of the dough to the baking tray for each cookie.
  8. Bake for 15-20 minutes until golden and solid.
  9. Leave to cool on the tray for 5 minutes then transfer to a rack to cool.
