Mix the oats, seeds, nuts, and flaked almonds together in a large bowl.
In a pan melt together the butter, maple syrup, honey, vanilla paste, and mixed spice.
Pour the melted mixture over the dry ingredient in the bowl and mix well.
Spread the mixture into 2 baking trays lined with parchment paper.
Bake for 15 minute, then sprinke the coconut flakes, dried fruit, chopped dates, and salt flakes over the granola mix and return to the over for a further 8-10 minutes.
Remove from the oven and leave to cool before removing from the baking trays.
Break into small pieces and store in an air-tight container.
