Ginger and lime chicken

Method

  1. Mix the lime zest and juice with the maple syrup and grated ginger.
  2. Slash each chicken breast 3-4 times with a sharp knife, then coat well with the marinade. Set aside for 10 mins.
  3. Melt the butter and oil in a frying pan on a medium heat.
  4. Fry the chicken breasts for 10-15 mins, turning halfway through, until cooked through and slightly caramelised.
  5. Add the remaining marinade juice to the pan and reduce to a jus.
