Ingredients
- zest and juice 1 lime
- 1 tbsp maple syrup or clear honey
- 1 tsp grated root ginger
- 2 skinless, boneless chicken breasts
- 1 tbsp butter
- 1 tsp olive oil
Method
- Mix the lime zest and juice with the maple syrup and grated ginger.
- Slash each chicken breast 3-4 times with a sharp knife, then coat well with the marinade. Set aside for 10 mins.
- Melt the butter and oil in a frying pan on a medium heat.
- Fry the chicken breasts for 10-15 mins, turning halfway through, until cooked through and slightly caramelised.
- Add the remaining marinade juice to the pan and reduce to a jus.
