Ingredients
- 200g 70% dark chocolate
- 50g coconut oil or butter
- 1tsp vanilla extract
- 50g dried fruit
- 75g nuts
- 50g seeds
- 25g flaxseed mix
- 50g crystallised ginger (optional)
Method
- Melt the chocolate and coconut oil or butter together over a low heat, or on a low setting in a microwave, until no lumps remain
- Coarsely chop the nuts and mix in a large with the other dry ingredients
- Pour the melted chocolate over the fruit and nut mix
- Pour into a baking tray lined with greaseproof paper
- Allow to cool before refrigerating
- Once set remove from the baking tray and cut into bite-sized pieces
- Store in an air-tight container
