Ingredients
- 1 tbsp caster sugar
- 3 tbsp cocoa powder
- 3 tbsp cornflour
- pinch of sea salt
- 400ml milk / non-dairy milk alternative
- 75g cream / creme fraiche / greek yogurt / marscapone / non-dairy alternative
- 75g dark chocolate (70% cocoa solids min)
Method
- Add the sugar, cocoa powder, cornflour, and salt to a saucepan with about 50ml of the milk. Mix with a whisk to form a smooth paste with no lumps
- Add the reamining milk and mix well
- Heat on a medium setting, stiring, until the mixture thickens
- Remove from the heat and add the cream and chocolate
- Stir until the chocolate melts and the mixture is smooth
- Pour into 125ml glasses and allow to cool
- Put in the refrigerator to set and server chilled
